Creamy Chicken Penne Pasta

A rich, comforting pasta dish with smoky bacon, tender chicken, and a velvety Parmesan cream sauce.
Ingredients
- Bacon4 slices
- Chicken breasts, sliced2 breasts
- Italian seasoning2 tsp
- Smoked paprika1 tsp
- Garlic, minced2 cloves
- Spinach2-3 cups
- Diced tomatoes1 can (14.5 oz)
- Heavy cream1½ cups
- Parmesan, grated1 cup
- Mini penne10 oz
Instructions

Cook bacon in a large skillet over medium heat until crispy. Remove and crumble, leaving 1 tbsp drippings in the pan.

Season sliced chicken with Italian seasoning and smoked paprika. Cook in the bacon drippings until golden and cooked through, about 5-6 minutes per side. Remove and set aside.

Sauté minced garlic in the pan until fragrant, about 30 seconds.

Add spinach and cook until wilted, about 2 minutes.

Pour in diced tomatoes and heavy cream. Stir to combine and bring to a gentle simmer.

Stir in grated Parmesan until melted and smooth. Season with salt and pepper to taste.

Meanwhile, cook mini penne in salted boiling water until al dente.

Drain pasta and add to the sauce along with the cooked chicken and crumbled bacon. Toss to coat and serve hot.
